Zucchini Bread


  • 3 large eggs
  • 1 cup vegetable oil
  • 2 cups brown sugar
  • 2 cups zucchini; grated
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 tablespoon vanilla
  • 1 cup walnut halves; chopped or mini-chocolate chips
  • 1 1/2 teaspoons cinnamon


1.  Beat eggs, oil, and sugar.  Add in zucchini.
2.  In a separate bowl, whisk together the dry ingredients.  Add the dry ingredients to the wet.
3.  Add the nuts or chocolate chips.
4.  Pour into greased and lined loaf pan.
5.  Bake 325 degrees for 55-65 minutes.
